The Faithful County found themselves in a tight spot after just 20 minutes, with Louth racing into a 2-7 to 0-3 lead.
The gap at half time was cut to 6 points, and from the second half onwards, Offaly found their defensive and offensive shape, enforcing 12 turnovers and scoring 2-5.
After her team battled back from behind to win once again, Offaly captain Ellee McEvoy says the team is ready for progress this year.
McEvoy finished up with 1-4 at full time.
