Michelin star chef Sam Moody and regenerative farmer Brendan Guinan are collaborating to showcase the best of local food produce in County Laois in a rustic farm setting.
A curated three-course meal using the finest of Laois produce will be served up at the innovative farm in Portlaoise.
In a rustic setting, diners will be treated to a pre-taster of what the new Bramley restaurant in Abbeyleix will aim to achieve, developing a community, over great food.
A three- course menu will be cooked up on a fire-pit on the regenerative farm with all ingredients used on the day available in the new off grid forest farm shop and at Bramley Abbeyleix.
Fiorbhia farm will be supplying the wild garlic, forest reared pork fillets, rhubarb and the firewood used to cook your meal while the vegetables will be supplied by The Red Shed Organic farm Portarlington while our organic mushrooms are supplied by Garryhinch Mushrooms.
All produce supplied is within a 20km radius of our farm and regeneratively grown.
This event, which is ticketed, will give diners a sample of chef Moody’s approach to dining, and creating an environment where good, locally sourced food, and the enjoyment of food is key.
Sam Moody, formerly of Ballyfin Demesne, is behind a new and upcoming venture at Bramley’s, Abbeyleix County Laois, says the goal of the restaurant, hoping to open in May, is to create a warm, friendly space where people can come and enjoy an elegant dining experience.

With a mission to exceed expectations in regenerative farming practices, the owner behind Fiorbhia Farm, Brendan Guinan, believes the collaboration will showcase the best of Laois produce, from his farm, and other Laois producers, many of whom are part of the Laois Taste Food group.
There are three dining sessions: 11.00am – 6pm and all tickets need to be reserved in advance.
