Leprino Cheese made the announcement yesterday.
SIPTU is meeting senior management at Leprino Foods in Portlaoise today.
This comes following what the union is calling the company's "shocking" and "regrettable" decision to end production by 2026.
The closure of the state-of-the-art facility, which employs 130 workers, will result in job losses across the Midlands region.
Union officials aim to explore alternatives to job losses and reduce the impact on employees and their families.
The Portlaoise plant began operations just five years ago.
Job losses from the closure of a Laois cheese factory could be minimised through other business expansions in the Midlands.

A long-standing supplier to Leprino Foods in Portlaoise says it's working to reallocate orders after the announcement the cheese manufacturer is closing its Laois operation.
Tirlán which supplies cheese curd to the company, say that while the site's closure impacts their supply, their broader relationship with Leprino remains strong.
It's also stating milk will be re-allocated to alternative products and markets within its portfolio, and that they'll work with the company 'to support a responsible and coordinated transition.'
