Two scientists are responsible for the €2.7m project.
A new project, led by midlands researchers, is set to "transform" the Irish food processing industry.
TUS scientists Dr Patrick Murray and Dr Lena Madden were the minds behind the €2.7 million CirCoVal project.
The initiative is aiming to take under used products in red meat production and develop them, adding value and promoting sustainability in the process.
It has secured funding from the Department of Agriculture, Food and the Marine.
